Is there anything that screams summer more than a barbeque? It is funny, even though my husband, Marc, and I cook outside all year long, a summer cookout feels and tastes different to me in the warm weather, especially when we eat outside. Our barbeque and our Big Green Egg smoker get a lot of action all season long. For the most part hot dogs and hamburgers are not featured on the menu. We use the grill to make omelets.
We have grilled eggplant on the grill, which we then placed inside the barbeque with sauce and mozzarella cheese concocting a light eggplant parmesan. But, by far my favorite outdoor dish is when I make fresh pizza dough in a bread machine and then place on a pizza stone with cheese and sauce and smoke on the Big Green Egg. It is amazing!
